Call it cliché, but the minute September rolls around, I can’t wait to start making soup. Sure, it may not be *that* over yet, but there’s something about the nostalgia of the season that comes flooding back in the dishes I make. (There’s also always gazpacho for warm days, right?)
While I still have a go-to list of fall soup recipes that I lean on, I’m always ready to give it a shot. (After the year we’ve had, the starter felt in order!) So, I took it to the internet to add a few more to this season’s rotation, and I’m here to share my winning picks with you today. So in the name of all that is cozy and comforting, let’s dive in, shall we?
Here are some easy fall soup recipes that are comforting and delicious.
1. Easy French Onion Soup
An oldie but a goodie, this soup always sounds like a good choice. In this recipe specifically, under the bubbly layer of melted cheese (my favorite) you’ll find two *secret* additives that make it hit the spot. Click the link below to see what I’m talking about!
2. Creamy Roasted Cauliflower and Mushroom Soup
It wasn’t until later in life that I discovered my love for mushrooms. (And I’m so glad I did!) This vegan and gluten-free soup is one of the reasons for this, thanks to its creamy consistency and nutritious ingredients. It’s safe to say that I will do this at least once on the first day of cold temperatures.
3. Soba Soup with Shrimp and Vegetables
Speaking of something I fell in love with later in life, soba noodles also make the list. I love their slippery qualities, especially when floating in a flavorful, sweet broth. For the upcoming cold season, I’m sure this is the perfect solution!
4. Chicken and Lemon Herb Dumpling Soup
My grandmother used to make a variation of this recipe when we visited her on winter days. In fact, when I look at this recipe, I can taste the familiar herby goodness that greets my mouth. I love this version both because of its flexibility (you can adjust based on what you have on hand) and the budget-friendly ingredient list. So, it’s a win-win in my book!
5. Three Beans
A soup season wouldn’t be without a little pepper in the mix! Thanks to a little help from my favorite cheese Cello (their cheese is so rich and delicious), we can make a comfort food to welcome the new season (and maybe watch a football game or two!).
6. Orzo and Chickpeas in Turmeric-Ginger Broth
I’m always looking for a recipe to include chickpeas, known as my favorite source of plant-based protein. When I laid eyes on this dish, which uses my favorite spices—ginger and turmeric—I knew it would be on my list!
7. Brothy Seafood Chowder
Seafood lovers, rejoice! This batch, complete with homemade stock, is the perfect short-term soup to take you from summer to fall.
8. Instant Pot Sweet Potato Tortilla Soup
Last but not least is this colorful and bright vegetable recipe! Packed with sweet potatoes, roasted tomatoes, and corn, it’s filling and very rich. Even better, it can be made in minutes thanks to the holy-grail kitchen gadget, the Instant Pot! (Psst! Don’t have one? Don’t worry, you can do this on the stove too!)
